Ingredients
Baby Brinjal (Baigan) 400 GMs
Stuffing
Crushed peanuts 2 Tbsp
Red chilli powder 1 Tbsp
Corriander-Jeera powder 1 Tbsp
Haldi ½ Tbsp
Garam masala ½ Tbsp
Pinch of hing
Salt to taste
Mustard oil 1½ Tbsp
Gravy
Garlic 6-7 pieces
Ginger 1 inch
Chopped onions 3
Roughly chopped tomatoes 2
Degi mirch 1 Tsp
Salt as per taste
Mustard oil
Chopped green chilies 2
Chopped garlic ½ Tsp
Pinch of haldi powder
Coriander powder 1Tbsp
Red Chilly powder 1 Tbsp
Garam masala ½ Tbsp
Pinch of kasuri methi
Method
Stuffing
In a bowl add all stuffing ingredients and mix well.
Make slits in baby brinjals
Stuff the mixture into baby brinjals.
Gravy
Take oil in a pan and add garlic, ginger, onions tomatoes, degi mirch and salt.
Cook till tomatoes turn mush.
Keep it cool and blend it into a fine paste.
Heat 1 Tsp mustard oil in a pressure cooker
Add green chilies, garlic, haldi powder, coriander powder, chilly powder and garam masala powder
Mix a little bit water to it
Add the grinded paste and kasuri methi
Cook for 2 minutes and add the stuffed brinjals
Add a little more water and pressure cook for 1 whistle
Serve hot garnished with fresh coriander leaves.
